Buffalo Blue Cheese Smoked Deviled Eggs

Have you ever had smoked deviled eggs? Let me tell you it is a game changer. And with the ease of use of Pellet Smokers, it is so easy to add smoke flavor to just about anything: ie, smoked deviled eggs!

To make a smoked deviled egg, you do everything you would normally do to make deviled eggs, with the addition of smoking your hard boiled eggs before you go to make the yolk mixture that goes into the eggs.

To make this smoked deviled egg recipe, you can use any smoker, but I used my Green Mountain Grill Pellet Smoker because I just wanted to add a touch of quick smoke without the fuss of having to use a chimney starter on my Big Green Egg. 

 

My go to deviled egg recipe is a good buffalo sauce and high quality blue cheese and you can make buffalo deviled eggs. I make a Florida Orange version of buffalo sauce using my Sunshine State of Mind Craft BBQ Rub that adds a touch of sweetness and lime to the sauce while cutting the spiciness. So good! 

 12large eggs

  • 1/4 cup mayo 
  • 1 tbsp dijon mustard
  • 1 tbsp dill relish
  • salt, to taste
  • pepper, to taste
  • smoked paprika- just a pinch for sprinkling over the eggs at the finish line

 To Make Buffalo Deviled Eggs, you will need:

Buffalo Sauce Simply melt the butter on the stove and combine with the other two ingredients.

Garnish

  • 8 oz of high quality blue cheese, crumbled
  • Chopped green onion

INSTRUCTIONS

Bring your eggs to a low boil and then turn the burner off and let sit for another 10 minutes. Rinse in cold water, then crack and peel under the faucet as the water is running over them (this helps get the shell off).

Next, slice the eggs in half and remove the yolk. Mix the yolk, mayo, relish, mustard, salt and pepper together with a fork until uniform in consistency. Put the mixture in a big ziplock bag and then cut the corner off to create a “pastry bag” so you can pipe the mixture into the yolks easily. Then add the blue cheese and green onion for a garnish.
