Roasted Pineapple Tequila Sunrise

A bright and fruit-forward take on the classic Tequila Sunrise, this cocktail uses homemade roasted pineapple juice to deepen the flavor and bring out the fruit’s natural sweetness. Roasting the pineapple enhances its caramelized notes, adding richness and complexity that pairs beautifully with tequila. Add your favorite tequila—blanco for a clean, crisp finish or reposado for mellow, oaky notes that play especially well with the roasted fruit. This drink was made to go with our Tequila Sunrise Burger, so be sure to roast enough pineapple for both.

To Broil, Grill, or Pan-Roast Pineapple:

Yields approximately 3/4 to 1 cup of juice, enough for 3–4 cocktails.

  • Cut about 2 1/2 cups of pineapple slices, skin removed and trimmed.
  • Reserve 1–2 thick round slices with skin on for cocktail garnish.
  • Pat all pieces dry with paper towels.
  • Brush trimmed slices with honey or sprinkle with a pinch of sugar for better caramelization.
  • Choose one of the following cooking methods:
  • - Broil: On a foil-lined baking sheet, broil for 2–3 minutes per side until caramelized.
  • - Grill: Grill over medium-high heat for 2–3 minutes per side.
  • - Pan: Sear in a skillet over medium-high heat for 2–3 minutes per side until golden and caramelized.
  • Let cool slightly, then blend the trimmed pieces until smooth.
  • Strain through a fine mesh sieve, let sit and drain for 10 minutes, then gently stir the pulp with a spoon to extract more juice.

Ingredients (per cocktail):

  • 2 oz tequila (blanco or reposado)
  • 2 oz homemade roasted pineapple juice
  • 2 oz fresh orange juice
  • 1/4 oz grenadine
  • Optional: splash of club soda
  • Garnish: roasted pineapple wedge (skin-on)
  • Tajín for rimming the glass (optional)

Instructions:

  1. Rim the glass: Rub a lime wedge around the rim and dip in Tajín to coat.
  2. In a shaker with ice, combine tequila, roasted pineapple juice, and orange juice. Shake well.
  3. Strain into an ice-filled, Tajín-rimmed glass.
  4. Slowly pour 1/4 oz grenadine down the side of the glass to create the sunrise effect.
  5. Top with a splash of club soda, if desired.
  6. Garnish with a roasted pineapple wedge with skin on.
