Tequila Sunrise Burgers with Roasted Pineapple Slaw & Chipotle Mayo
Serves: 3 | Total Time: 35–40 minutes
Ingredients
For the Burgers:
- 1 package Booze Dogs Tequila-Infused Burger Patties
- 3 slices of cheese – try pepper jack or Monterey Jack
- 3 burger buns, toasted (brioche or Hawaiian optional)
- 6 slices of crispy bacon
- 3 sunny-side-up eggs
- 1 ripe avocado, mashed with a pinch of salt and lime juice (optional)
For the Roasted Slaw:
- 1 1/2 cups premixed coleslaw blend or
- - 1 cup shredded green cabbage
- - 1/2 cup shredded red cabbage
- 1/4 cup grated carrot (if not included in blend)
- 1/3 cup diced broiled, grilled, or pan-roasted pineapple
- 1/4 small red onion, very thinly sliced or 1–2 green onions, chopped
- 1 1/2 tbsp mayo
- 2 tsp fresh lime juice
- 2 tsp fresh orange juice
- 1 tsp orange zest
- 1 tsp Tajín (chili lime seasoning), optional
- 2 tbsp chopped cilantro, optional
- Salt and pepper to taste
For the Chipotle Mayo:
- 1/4 cup mayo
- 2 tbsp sour cream
- 1–2 chipotle peppers in adobo sauce
- 1 tbsp adobo sauce (from the can)
- 1 tbsp fresh lime juice
- 1/2 tsp garlic powder
- Pinch of salt
- Optional: pinch of cayenne for extra heat
To Broil, Grill, or Pan-Roast Pineapple:
- Cut about 2 1/2 cups of pineapple chunks and 1–2 thick round slices (for cocktail juice, slaw, and garnish).
- Pat dry with paper towels.
- Lightly brush with honey or sprinkle with a pinch of sugar for better caramelization.
- Choose one of the following cooking methods:
- - Broil: Place on a foil-lined baking sheet. Broil on high for 2–3 minutes per side until caramelized.
- - Grill: Grill over medium-high heat for 2–3 minutes per side.
- - Pan: Sear in a lightly oiled hot skillet for 2–3 minutes per side.
Instructions
- Make the Slaw: In a bowl, whisk together mayo, lime juice, orange juice, and orange zest. Add coleslaw blend (or cabbage mix), carrot, pineapple, onion, cilantro, Tajín (if using), and season with salt and pepper. Toss well. Slaw can be made ahead and chilled.
- Make the Chipotle Mayo: Blend mayo, sour cream, chipotle peppers, adobo sauce, lime juice, garlic powder, salt, and cayenne (if using) in a food processor until smooth. Chill.
- Prepare the Avocado (if using): Mash avocado with a pinch of salt and lime juice.
- Cook the Bacon and Eggs: Cook bacon until crispy and fry eggs sunny-side-up.
- Cook the Patties: Grill or pan-fry the Booze Dogs Tequila-Infused Burger Patties to desired doneness. Top with cheese in the last minute to melt.
- Assemble the Tequila Sunrise Burgers: Spread chipotle mayo on the top bun. Spread mashed avocado on the bottom bun (optional). Add a generous layer of roasted pineapple chili lime slaw. Place the cheese-topped tequila burger patty. Top with crispy bacon and a sunny-side-up egg. Finish with the toasted top bun.
